This classic French pastry, Galette des Rois, is a delicious almond cream-filled puff pastry traditionally served to celebrate Epiphany. Easy to make and delightful to eat, this recipe will become a festive favorite.

Ingredients

  • 100 g butter
  • 1 egg yolk
  • 2 eggs
  • 100 g ground almonds
  • 2 puff pastry sheets
  • 100 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 200°C (392°F).
Step 2
In a bowl, mix together the ground almonds, sugar, softened butter, 2 eggs, and vanilla extract until smooth to form the almond cream.
Step 3
Roll out one sheet of puff pastry on a baking tray lined with parchment paper.
Step 4
Spread the almond cream mixture evenly over the pastry, leaving about a 2 cm border around the edges.
Step 5
Place the second sheet of puff pastry on top of the almond cream, pressing the edges to seal the pastry.
Step 6
Brush the top of the pastry with the egg yolk for a golden finish.
Step 7
Using the tip of a knife, create a design on the top pastry layer and make a small hole in the center to allow steam to escape.
Step 8
Bake in the preheated oven for 25-30 minutes or until the pastry is golden and puffed.
Step 9
