Step 1
Heat olive oil and butter in a large skillet over medium-high heat.

Season the chicken breasts with salt and black pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the sliced mushrooms and minced garlic. Sauté until the mushrooms are tender, about 5 minutes.

Add Madeira wine to the skillet and bring to a simmer. Cook for 2-3 minutes, allowing the wine to reduce slightly.

Pour in the chicken broth and heavy cream, and bring the mixture to a simmer.

In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the skillet and cook until the sauce thickens, about 2 minutes.

Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for an additional 2-3 minutes to heat the chicken through.
