Ingredients

  • 0.5 tsp black pepper
  • 4 fish fillets
  • 2 tbsp fresh herbs
  • 3 cloves garlic
  • 1 lemon
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 cups vegetables

Directions

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Cut four large pieces of aluminum foil, enough to wrap each fish fillet individually.
Step 3
Place a fish fillet in the center of each piece of foil.
Step 4
Drizzle olive oil over each fillet and sprinkle with minced garlic, salt, and black pepper.
Step 5
Top each fillet with lemon slices and chopped fresh herbs.
Step 6
Distribute the mixed vegetables evenly around each fillet.
Step 7
Fold the foil over the fish and vegetables to create a sealed packet.
Step 8
Place the foil packets on a baking sheet and bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
Step 9
Carefully open the foil packets, being cautious of the hot steam, and serve immediately.
