Delight your friends and family with these festive pinwheel cookies. Perfect for the holiday season, they combine a colorful swirl design with a delicious buttery flavor.
Directions
Step 1
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 2
In a large bowl, beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract, and mix until combined.
Step 3
Gradually add the flour mixture to the butter mixture, mixing until just combined.
Step 4
Divide the dough into two equal portions. Color one portion with red food coloring and the other with green food coloring. Mix each portion until the color is evenly distributed.
Step 5
Roll out each portion of dough between two sheets of parchment paper to form two rectangles of equal size.
Step 6
Place the green dough on top of the red dough, and gently press them together. Roll the combined dough into a log shape, using the parchment paper to help you.
Step 7
Wrap the dough log in plastic wrap and refrigerate for at least 2 hours, or until firm.
Step 8
Preheat the oven to 180°C (350°F). Line baking sheets with parchment paper.
Step 9
Slice the dough log into 0.5 cm (1/4 inch) thick slices and place them on the prepared baking sheets, spacing them about 2.5 cm (1 inch) apart.
Step 10
Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
