Butter a 9x9 inch baking dish or line it with parchment paper.

In a large saucepan, combine the sugar, cocoa powder, butter, and milk.

Once boiling, reduce heat to low and simmer without stirring until the mixture reaches 238°F (114°C) on a candy thermometer.

Remove from heat and let it cool to 110°F (43°C) without stirring.

Add the vanilla extract and salt. Beat the mixture with a wooden spoon until it thickens and loses its gloss.

Pour the fudge into the prepared baking dish and let it cool completely before cutting into squares.
