Ingredients

  • 1 bell pepper
  • 400 grams black beans
  • 950 ml chicken broth
  • 1 tablespoon chili powder
  • 0.5 cup cilantro
  • 150 grams corn
  • 1 teaspoon cumin
  • 400 grams diced tomatoes
  • 3 cloves garlic
  • 450 grams ground turkey
  • 1 tablespoon olive oil
  • 1 onion
  • 0.5 teaspoon pepper
  • 1 teaspoon salt

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic; cook until the onion is translucent.
Step 3
Add the ground turkey and cook until browned.
Step 4
Stir in the chopped bell pepper and cook for another 2-3 minutes.

Pour in the chicken broth, black beans, corn, and diced tomatoes.

Add the chili powder, cumin, salt, and pepper. Stir well.
Step 7
Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
Step 8
Stir in the chopped cilantro just before serving.
