A traditional Japanese sweet paste made from red beans and sugar. Perfect for filling pastries, mochi, or as a sweet spread.
Directions
Step 1
Rinse the red beans under cold water until the water runs clear.
Step 2
Place the beans in a large pot and cover with water. Bring to a boil and then drain.
Step 3
Refill the pot with fresh water and bring the beans to a boil again. Reduce heat and simmer for 1-1.5 hours, or until beans are soft.
Step 4
Drain the beans and return to the pot. Add the white sugar and stir constantly over medium heat until the sugar is completely dissolved and the mixture thickens.
Step 5
Mash the beans to your desired consistency, either smooth or slightly chunky.
Step 6
Allow the paste to cool before using or storing.
