Koshari is a traditional Egyptian dish made with rice, lentils, chickpeas, and pasta, topped with a spicy tomato sauce and crispy fried onions. It is a hearty and flavorful meal that is both comforting and nutritious.

Ingredients

  • 200 grams brown lentils
  • 200 grams chickpeas
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 4 cloves garlic
  • 100 grams macaroni pasta
  • 2 onions
  • 1 teaspoon red chili flakes
  • 200 grams rice
  • 1 teaspoon salt
  • 400 grams tomato sauce
  • 4 tablespoons vegetable oil
  • 500 ml water

Directions

Step 1
Rinse the rice and lentils separately. Cook the lentils in boiling water for about 20 minutes until tender. Drain and set aside.
Step 2
In a separate pot, cook the rice in boiling water until tender, about 15-20 minutes. Drain and set aside.
Step 3
Cook the macaroni pasta according to package instructions. Drain and set aside.
Step 4
In a large pan, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onions and fry until golden brown and crispy. Remove from the pan and set aside.
Step 5
In the same pan, add the remaining 2 tablespoons of vegetable oil. Add minced garlic, cumin powder, coriander powder, red chili flakes, and salt. Cook for 2-3 minutes until fragrant.
Step 6
Add the tomato sauce to the pan and simmer for 10 minutes. Add a little water if the sauce is too thick.
Step 7
In a large serving dish, layer the rice, lentils, macaroni, and chickpeas. Pour the tomato sauce over the top.
Step 8
Garnish with the crispy fried onions and serve hot.
