  • 60 g butter
  • 240 g cornmeal
  • 2 eggs
  • 120 g gluten-free flour
  • 240 ml milk
  • 5 g salt
  • 50 g sugar

Directions

Step 1
Preheat your oven to 425°F (220°C). Grease a 9-inch round cake pan or cast-iron skillet.

In a large bowl, combine the cornmeal, gluten-free flour, sugar, baking powder, and salt.

In another bowl, whisk together the milk, eggs, and melted butter.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
