A traditional English recipe, Lardy Cake is a rich, buttery bread filled with dried fruits and spices. Perfect for a cozy tea time treat.

Ingredients

  • 10 g active dry yeast
  • 200 g dried mixed fruit
  • 5 g ground cinnamon
  • 75 g lard
  • 300 ml lukewarm water
  • 10 g salt
  • 500 g strong white flour
  • 50 g sugar

Directions

Step 1
Mix the flour and salt in a large bowl.
Step 2
Rub in the lard until the mixture resembles breadcrumbs.
Step 3
Dissolve the yeast in the lukewarm water and add it to the flour mixture.
Step 4
Knead the dough until smooth and elastic, then cover and let it rise for about an hour, until doubled in size.
Step 5
Preheat the oven to 220°C (428°F).
Step 6
Roll out the dough on a floured surface into a rectangle and sprinkle the sugar, dried mixed fruit, and ground cinnamon over it.
Step 7
Fold the dough into thirds, like folding a letter, then roll it out again and repeat the process twice more.
Step 8
Place the folded dough into a greased baking tin, cover, and let rise for another 30 minutes.
Step 9
Bake in the preheated oven for 30-35 minutes, until golden brown.
Step 10
Allow to cool slightly before slicing and serving.
