  • 2 bay leaves
  • 4 beef cheeks
  • 500 ml beef stock
  • 0.5 tsp black pepper
  • 2 carrot
  • 2 celery stalks
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 500 ml red wine
  • 1 tsp salt
  • 4 thyme sprigs
  • 2 tbsp tomato paste

Directions

Step 1
Preheat your oven to 160°C (320°F).
Step 2
Heat the olive oil in a large oven-proof pot over medium-high heat.
Step 3
Season the beef cheeks with salt and black pepper, then sear them in the pot until browned on all sides. Remove and set aside.

In the same pot, add the chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute.

Pour in the red wine and let it reduce by half.

Stir in the beef stock, tomato paste, thyme sprigs, and bay leaves.

Return the beef cheeks to the pot, ensuring they are submerged in the liquid.

Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 hours or until the beef cheeks are tender.

Remove the beef cheeks from the pot and keep warm. Strain the sauce if desired and simmer to thicken.
