Step 1
Peel the green skin off the watermelon rind and cut the white part into bite-sized pieces.

In a saucepan, combine water, rice vinegar, sugar, salt, soy sauce, and red chili flakes. Bring to a boil.

Once boiling, add the watermelon rind pieces and let it simmer for 10 minutes.

Remove from heat and let it cool to room temperature.
