  • 30 g cocoa powder
  • 85 g coconut
  • 300 g confectioners' sugar
  • 30 g custard powder
  • 1 egg
  • 200 g graham cracker crumbs
  • 30 ml milk
  • 50 g sugar

Directions

Step 1
In a saucepan over low heat, melt 115g (1/2 cup) butter. Add in the white sugar and cocoa powder, stirring until smooth.
Step 2
Quickly beat in the egg, stirring constantly to prevent it from cooking. Remove from heat.
Step 3
Stir in the graham cracker crumbs and shredded coconut until well incorporated. Press firmly into an ungreased 8x8 inch pan.
Step 4
In a medium bowl, cream together 115g (1/2 cup) softened butter, custard powder, and milk. Gradually mix in the confectioners' sugar until smooth. Spread over the base layer in the pan.
Step 5
In a microwave-safe bowl, melt the semisweet chocolate and 15g (2 tablespoons) butter together. Stir until smooth and immediately pour over the custard layer, spreading evenly.
Step 6
Refrigerate for at least 1 hour before cutting into squares.
