Ingredients

  • 2 bay leaves
  • 1 tbsp black peppercorns
  • 8 chicken thighs
  • 4 cloves garlic
  • 2 tbsp oil
  • 120 ml soy sauce
  • 1 tsp sugar
  • 120 ml vinegar
  • 240 ml water

Directions

Step 1
In a large bowl, combine soy sauce, vinegar, water, minced garlic, bay leaves, and black peppercorns.
Step 2
Add the chicken thighs to the marinade and let it sit for at least 30 minutes, or overnight for best results.
Step 3
Heat the oil in a large pot over medium-high heat.
Step 4
Remove the chicken from the marinade and sear in the pot until golden brown on both sides.
Step 5
Pour the marinade into the pot with the chicken and bring to a boil.
Step 6
Reduce heat to low, cover, and simmer for about 40 minutes, or until the chicken is cooked through.
Step 7
Add sugar and stir to combine. Adjust seasoning to taste.
Step 8
Serve hot with steamed rice.
