A traditional Australian bread, damper is a simple and quick bread made with basic ingredients and often cooked over a campfire. Perfect for a quick snack or side dish.

Ingredients

  • 30 g butter
  • 250 ml milk
  • 1 tsp salt
  • 450 g self-raising flour
  • 50 ml water

Directions

Step 1
Preheat your oven to 200°C (390°F).
Step 2
In a large bowl, mix the self-raising flour and salt.
Step 3
Rub the butter into the flour mixture until it resembles coarse crumbs.
Step 4
Make a well in the center and add the milk and water. Mix until a soft dough forms.
Step 5
Turn the dough onto a lightly floured surface and knead gently until smooth.
Step 6
Shape the dough into a round loaf and place it on a baking tray lined with baking paper.
Step 7
Score the top of the dough with a sharp knife to create an 'X' shape.
Step 8
Bake in the preheated oven for 25-30 minutes, or until the damper sounds hollow when tapped on the bottom.
Step 9
Allow to cool slightly before slicing. Serve warm with butter or your favorite spread.
