  • 2 bay leaves
  • 1 kg beef tongue
  • 1 tbsp black peppercorns
  • 12 corn tortillas
  • 0.5 cup fresh cilantro
  • 3 garlic cloves
  • 2 lime
  • 1 onion
  • 2 tsp salt
  • 2 liters water

Directions

Step 1
Rinse the beef tongue under cold water and place it in a large pot.
Step 2
Add the chopped onion, minced garlic, bay leaves, black peppercorns, and salt to the pot.
Step 3
Pour in enough water to cover the tongue and bring it to a boil.
Step 4
Reduce heat to a simmer and cook for about 2.5 hours or until the tongue is tender.
Step 5
Remove the tongue from the pot and let it cool slightly before peeling off the outer layer.
Step 6
Slice the peeled tongue into thin strips.
Step 7
Heat the corn tortillas on a skillet or directly over a flame until warm and pliable.
Step 8
Fill each tortilla with the sliced beef tongue, and top with chopped cilantro and a squeeze of lime.
