Ingredients

  • 0.5 tsp allspice
  • 0.5 tsp black pepper
  • 2 carrots
  • 2 celery stalks
  • 400 ml coconut milk
  • 500 g fish fillets
  • 1000 ml fish stock
  • 3 garlic cloves
  • 1 lime
  • 1 onion
  • 2 potatoes
  • 1 tsp salt
  • 1 scotch bonnet pepper
  • 1 tsp thyme
  • 1 tomato

Directions

Step 1
In a large pot, heat some oil over medium heat and sauté the chopped onion and minced garlic until fragrant.
Step 2
Add the sliced carrots, celery, and diced potatoes to the pot. Cook for a few minutes until they start to soften.
Step 3
Stir in the chopped tomato, thyme, and allspice. Cook for another 2-3 minutes.
Step 4
Pour in the fish stock and bring to a boil. Reduce the heat and let it simmer until the vegetables are tender, about 15 minutes.
Step 5
Add the fish fillets to the pot and cook until the fish is fully cooked, about 10 minutes.
Step 6
Pour in the coconut milk and stir gently to combine. Add the lime juice, salt, and black pepper.
Step 7
If using, add the whole scotch bonnet pepper for added heat. Let the soup simmer for another 5 minutes.
Step 8
Remove the scotch bonnet pepper before serving. Serve the soup hot with fresh lime wedges on the side.
