A traditional Italian pasta dish made with spaghetti, eggs, cheese, pancetta, and pepper.
Directions
Step 1
Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, according to the package instructions.
Step 2
While the spaghetti is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until it is crispy and golden brown, about 5-7 minutes. Remove the skillet from the heat.
Step 3
In a medium bowl, whisk together the eggs, grated Parmigiano Reggiano, grated Pecorino Romano, and freshly ground black pepper.
Step 4
Once the spaghetti is done, reserve 1/2 cup of the pasta water and then drain the spaghetti.
Step 5
Quickly add the hot spaghetti to the skillet with the pancetta and toss to combine.
Step 6
Pour the egg and cheese mixture over the spaghetti, tossing quickly to ensure the eggs don't scramble. Add a bit of the reserved pasta water if the sauce seems too thick.
Step 7
Season with a pinch of salt to taste and serve immediately, garnished with extra grated cheese and black pepper if desired.
