A classic and elegant potato side dish, Duchess Potatoes are creamy mashed potatoes with butter, cream, and egg yolks, piped into decorative shapes and baked until golden brown.
Directions
Step 1
Place potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil over medium-high heat, and cook until potatoes are tender, about 15-20 minutes.
Step 2
Drain potatoes well, then return to the pot. Mash the potatoes until smooth.
Step 3
Add butter, heavy cream, nutmeg, black pepper, and 2 egg yolks to the mashed potatoes. Stir until well combined.
Step 4
Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe the potatoes into decorative mounds on a baking sheet lined with parchment paper.
Step 5
Beat the remaining egg and lightly brush it over the piped potatoes.
Step 6
Preheat oven to 220°C (425°F). Bake until golden brown, about 20-25 minutes.
