  • 200 g cherry tomatoes
  • 1 cucumber
  • 150 g feta cheese
  • 30 ml lemon juice
  • 15 g mint
  • 60 ml olive oil
  • 30 g parsley
  • 200 g pearl couscous
  • 1 red onion
  • 1 tsp salt

Directions

Step 1
Cook the pearl couscous according to the package instructions. Drain and let it cool.
Step 2
In a large bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
Step 3
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
Step 4
Pour the dressing over the couscous mixture and toss to combine.
Step 5
Serve immediately or refrigerate for later use.
