Biko is a traditional Filipino rice cake made from glutinous rice, coconut milk, and brown sugar. It's a sweet and sticky treat that's often served during special occasions and celebrations.
Directions
Step 1
Rinse the glutinous rice thoroughly and drain.

In a large pot, combine the glutinous rice and 400ml of coconut milk. Cook over medium heat until the rice is partially cooked, about 20 minutes.

In a separate pan, combine the remaining coconut milk and brown sugar. Cook over medium heat, stirring continuously, until the sugar is completely dissolved and the mixture thickens.
Step 4
Add the partially cooked rice to the coconut milk and sugar mixture. Stir continuously until the rice is fully cooked and the mixture becomes thick and sticky.
Step 5
Transfer the biko to a greased baking dish. Flatten the surface with a spatula.
Step 6
Allow the biko to cool before slicing and serving.
