Step 1
Preheat oven to 175°C (350°F). Line muffin tins with paper liners.
Step 2
Place a vanilla wafer at the bottom of each liner.
Step 3
In a large bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, beating well after each addition.
Step 5
Fill each muffin liner with the cream cheese mixture, about 2/3 full.
Step 6
Bake in preheated oven for 20 minutes. Let cool completely.

Top each mini cheesecake with a spoonful of cherry pie filling.
