Sinigang na Bangus is a Filipino sour soup made with milkfish cooked in a tangy tamarind broth. This comforting dish is layered with fresh vegetables and is perfect for a warming meal.

Ingredients

  • 1 eggplant
  • 2 tbsp fish sauce
  • 2 green chili
  • 1 milkfish
  • 1 onion
  • 1 radish
  • 40 g tamarind base
  • 2 tomatoes
  • 1.5 L water
  • 100 g water spinach

Directions

Step 1
In a large pot, bring the water to a boil.
Step 2
Add the tamarind soup base mix and stir until dissolved.
Step 3
Add the tomatoes, onion, and radish. Cook for about 5 minutes.
Step 4
Add the sliced milkfish and cook for another 10 minutes.
Step 5
Add the eggplant and cook for 5 more minutes.
Step 6
Add the water spinach and green chili peppers, cook for another 2 minutes.
Step 7
Season with fish sauce to taste.
Step 8
Serve hot with steamed rice.
