  • 125 grams all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 120 milliliters boiling water
  • 50 grams cocoa powder
  • 1 egg
  • 200 grams granulated sugar
  • 120 milliliters milk
  • 0.5 teaspoon salt
  • 1.5 teaspoons vanilla extract
  • 60 milliliters vegetable oil

Directions

Step 1
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
Step 2
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Step 3
Add the milk, vegetable oil, egg, and vanilla extract to the dry ingredients and mix until well combined.
Step 4
Carefully add the boiling water to the batter and mix until smooth. The batter will be thin, but that's okay.
Step 5
Pour the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
Step 6
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Step 7
Allow the cupcakes to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before frosting.
