Ingredients

  • 120 g barley
  • 1 bay leaf
  • 1500 ml beef broth
  • 450 g beef stew meat
  • 0.5 tsp black pepper
  • 3 carrots
  • 3 celery stalks
  • 1 tsp dried thyme
  • 150 g frozen peas
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 500 ml water

Directions

Step 1
Heat olive oil in a large pot over medium-high heat.
Step 2
Add beef stew meat and cook until browned on all sides.
Step 3
Add chopped onion, sliced carrots, celery, and minced garlic to the pot. Cook until vegetables are tender.
Step 4
Stir in beef broth, water, barley, tomato paste, bay leaf, thyme, salt, and pepper.
Step 5
Bring the mixture to a boil, then reduce heat and simmer for 1 hour, or until beef and barley are tender.
Step 6
Add frozen peas and cook for an additional 5 minutes.
Step 7
Remove bay leaf before serving. Enjoy!
