Ingredients

  • 0.5 teaspoons black pepper
  • 1 carrot
  • 4 cups cooked rice
  • 2 eggs
  • 3 garlic cloves
  • 3 green onions
  • 1 onion
  • 0.5 cups peas
  • 1.5 cups pineapple chunks
  • 0.5 teaspoons salt
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil

Directions

Step 1
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Step 2
Add the garlic and onion, and sauté until fragrant, about 1-2 minutes.
Step 3
Add the carrot and peas, and cook until tender, about 3-4 minutes.
Step 4
Push the vegetables to the side of the skillet and add the remaining 1 tablespoon of vegetable oil.
Step 5
Pour in the beaten eggs and scramble until fully cooked.
Step 6
Add the cooked rice, pineapple chunks, soy sauce, salt, and black pepper to the skillet.

Stir-fry everything together until well combined and heated through, about 5-7 minutes.
