Directions
Step 1
In a medium saucepan, combine the whole milk, granulated sugar, and salt. Heat over medium heat until the mixture is hot but not boiling.

In a separate bowl, whisk together the matcha powder and a small amount of hot milk mixture until smooth. Add this back into the saucepan and mix well.

In another bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly to temper the eggs.

Pour the egg yolk mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.

Remove from heat and strain the mixture through a fine-mesh sieve into a bowl. Stir in the heavy cream.
Step 6
Cool the mixture to room temperature, then cover and refrigerate for at least 4 hours or overnight.
Step 7
Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
Step 8
Transfer the churned ice cream to a lidded container and freeze for at least 2 hours before serving.
