  • 500 g all-purpose flour
  • 15 g baking powder
  • 5 g baking soda
  • 240 ml buttermilk
  • 5 g salt
  • 115 g unsalted butter

Directions

Step 1
Preheat your oven to 220°C (425°F).

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until the butter pieces are about the size of peas.

Pour in the cold buttermilk and stir until just combined. The dough will be slightly sticky.

Turn the dough out onto a lightly floured surface. Knead the dough gently a few times until it comes together.

Pat the dough into a rectangle about 1/2 inch thick. Fold the dough in half, then pat it down again. Repeat this process 3 more times.

Use a biscuit cutter or a glass to cut out biscuits from the dough. Place the biscuits on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.
