This Amish Friendship Bread Starter is the base for making the famous sweet, cinnamon-flavored Amish Friendship Bread. It’s a type of sourdough starter that ferments over 10 days before it’s ready to use.
Directions
Step 1
In a small bowl, dissolve the yeast in warm water and let it stand for 10 minutes until frothy.
Step 2
In a large non-metal bowl, combine flour and sugar. Mix thoroughly or the flour will get lumpy when you add the milk.
Step 3
Slowly stir in warm milk and dissolved yeast mixture. Loosely cover the bowl with a lid, cloth, or plastic wrap, and let it stand at room temperature until bubbly.
Step 4
Once the mixture is bubbly, transfer it to a large gallon-size ziplock bag or keep it in the bowl. This is Day 1 of the 10-day cycle.
Step 5
For the next 10 days, handle the starter according to the following instructions: Day 1: Do nothing. Day 2: Mash the bag. Day 3: Mash the bag. Day 4: Mash the bag. Day 5: Add 1 cup each of flour, sugar, and milk. Mash the bag. Day 6: Mash the bag. Day 7: Mash the bag. Day 8: Mash the bag. Day 9: Mash the bag. Day 10: Add 1 cup each of flour, sugar, and milk. Mix thoroughly.
Step 6
After feeding the starter on Day 10, it's ready to use. Divide the starter into 1-cup portions to share with friends or to use in the Amish Friendship Bread recipe.
