Delicious cheese enchiladas with a homemade sauce, perfect for a comforting and hearty meal.

Ingredients

  • 0.5 tsp black pepper
  • 12 corn tortillas
  • 500 ml enchilada sauce
  • 1 onion
  • 0.5 tsp salt
  • 450 g shredded cheddar cheese
  • 2 tbsp vegetable oil

Directions

Step 1
Preheat the oven to 175°C (350°F).
Step 2
In a pan, heat the vegetable oil over medium heat and sauté the chopped onion until translucent.
Step 3
Add the enchilada sauce, salt, and pepper to the pan. Simmer for 10 minutes.
Step 4
Lightly fry each tortilla in a separate pan with a bit of oil until soft. Drain on paper towels.
Step 5
Dip each tortilla in the enchilada sauce, then place on a plate.
Step 6
Fill each tortilla with a handful of shredded cheese and a bit of chopped onion. Roll up the tortillas and place them seam-side down in a baking dish.
Step 7
Pour remaining enchilada sauce over the rolled tortillas and sprinkle with any remaining cheese.
Step 8
Bake in the preheated oven for 20 minutes or until cheese is melted and bubbly.
