Ingredients

  • 0.5 tsp black pepper
  • 2 carrot
  • 2 celery stalk
  • 500 grams chicken breast
  • 1500 ml chicken broth
  • 200 grams egg noodles
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 onion
  • 2 tbsp parsley
  • 1 tsp salt

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add chopped onion, minced garlic, sliced carrots, and celery to the pot. Cook until vegetables are tender, about 5 minutes.
Step 3
Add chicken breast to the pot and pour in the chicken broth. Bring to a boil.
Step 4
Reduce heat and simmer until chicken is cooked through, about 20 minutes.
Step 5
Remove the chicken from the pot and shred it with two forks.
Step 6
Return the shredded chicken to the pot and add the egg noodles. Cook until noodles are tender, about 8-10 minutes.
Step 7
Season the soup with salt and black pepper to taste.
Step 8
Stir in chopped fresh parsley just before serving.
