Step 1
In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Add the chopped onion, celery, and green bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.

Stir in the minced garlic and cook for another 1-2 minutes.

Add the soaked and drained black-eyed peas, chicken broth, diced tomatoes, bay leaf, thyme, salt, and black pepper to the pot. Bring to a boil.

Reduce the heat to low and simmer for 45-60 minutes, or until the peas are tender.

While the peas are cooking, prepare the rice according to the package instructions.

Once the peas are tender, remove the bay leaf and stir in the cooked bacon.
