Step 1
Clean the chicken pieces with lime juice and rinse with water.

Season the chicken with salt, black pepper, and browning sauce. Let it marinate for at least 1 hour.

Heat the vegetable oil in a large pot over medium heat.

Add the marinated chicken pieces to the pot and brown on all sides.

Remove the chicken and set aside.

In the same pot, sauté the onions, garlic, and ginger until fragrant.

Add the thyme, scotch bonnet pepper, bell pepper, tomatoes, and carrots. Cook for about 5 minutes.

Return the chicken to the pot and add water and soy sauce.

Bring to a boil, then reduce heat to low and simmer for 45 minutes, until the chicken is tender and the sauce has thickened.
