Ingredients

  • 1 tsp basil
  • 1000 ml beef broth
  • 0.5 tsp black pepper
  • 100 g bread crumbs
  • 2 carrot
  • 2 stalks celery
  • 1 egg
  • 2 cloves garlic
  • 500 g ground beef
  • 15 ml olive oil
  • 1 onion
  • 50 g parmesan cheese
  • 1 tbsp parsley
  • 100 g pasta
  • 1 tsp salt
  • 800 g tomatoes

Directions

Step 1
In a large bowl, combine ground beef, bread crumbs, egg, Parmesan cheese, and minced garlic. Mix well and form into small meatballs.
Step 2
Heat olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and diced celery. Cook until vegetables are tender, about 5 minutes.

Add the meatballs to the pot and cook until browned on all sides, about 5-7 minutes.
Step 4
Stir in the diced tomatoes and beef broth. Bring to a boil, then reduce heat and let simmer for 20 minutes.
Step 5
Add the small pasta to the soup and cook until pasta is tender, about 10 minutes.
Step 6
Season the soup with salt, black pepper, and dried basil. Stir in chopped fresh parsley before serving.
