Ingredients

  • 120 grams all-purpose flour
  • 0.5 teaspoon cayenne pepper
  • 120 grams cheddar cheese
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 60 grams unsalted butter

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a large bowl, combine the flour, cayenne pepper, and salt.

Add the chilled butter to the flour mixture and rub it in with your fingertips until the mixture resembles coarse crumbs.

Stir in the grated cheddar cheese.
Step 5
Add the milk and mix until a dough forms.
Step 6
On a lightly floured surface, roll out the dough to a rectangle about 1/4 inch thick.

Cut the dough into thin strips about 1/2 inch wide and 6 inches long.

Place the strips on a baking sheet lined with parchment paper.

Bake in the preheated oven for 15-20 minutes or until golden and crisp.

Remove from the oven and let the cheese straws cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
