Ingredients

  • 120 g all-purpose flour
  • 10 g baking powder
  • 5 g baking soda
  • 240 ml buttermilk
  • 240 g cornmeal
  • 1 egg
  • 500 ml oil for frying
  • 60 g onion
  • 5 g salt
  • 15 g sugar

Directions

Step 1
In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, and sugar.
Step 2
In another bowl, whisk together the buttermilk and egg.
Step 3
Add the wet ingredients to the dry ingredients and stir until just combined.
Step 4
Fold in the chopped onion.
Step 5
Heat the oil in a deep fryer or large pot to 375°F (190°C).
Step 6
Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
Step 7
Remove hush puppies with a slotted spoon and drain on paper towels.
