Ingredients

  • 2 bell peppers
  • 1 bunch cilantro
  • 400 ml coconut milk
  • 400 g diced tomatoes
  • 200 ml fish stock
  • 3 garlic cloves
  • 30 ml lime juice
  • 2 tbsp olive oil
  • 1 onion
  • 2 tbsp palm oil
  • 1 tsp pepper
  • 1 tsp salt
  • 500 g white fish fillets

Directions

Step 1
Marinate the fish chunks with lime juice and salt for 20 minutes.
Step 2
In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell peppers, and garlic. Sauté until the vegetables are soft and fragrant.
Step 3
Pour in the coconut milk, diced tomatoes, and fish stock. Bring the mixture to a simmer.
Step 4
Add the marinated fish chunks to the pot. Cook for about 10-15 minutes or until the fish is cooked through.
Step 5
Stir in the chopped cilantro and season with black pepper. If using, add the palm oil for extra flavor.
Step 6
Serve the stew hot, garnished with additional cilantro if desired.
