Ingredients

  • 1 bell pepper
  • 0.5 tsp black pepper
  • 100 g cheddar cheese
  • 500 g chicken breast
  • 400 g chopped tomatoes
  • 200 g chorizo
  • 200 ml double cream
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tbsp parsley
  • 300 g penne pasta
  • 1 tsp salt

Directions

Step 1
Preheat the oven to 200°C (392°F).
Step 2
Cook the penne pasta according to the package instructions. Drain and set aside.
Step 3
In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and cook until browned.

Add the sliced chorizo to the skillet and cook for another 5 minutes.
Step 5
Add the chopped onion, minced garlic, and chopped bell pepper to the skillet. Cook until the vegetables are softened.

Pour in the chopped tomatoes and double cream. Stir to combine and bring to a simmer.

Season with salt and black pepper. Let the sauce simmer for 10 minutes.

Combine the cooked penne pasta with the sauce and mix well.

Transfer the pasta mixture to a baking dish. Sprinkle the grated cheddar cheese on top.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Garnish with chopped parsley before serving.
