Step 1
Heat the olive oil in a large pot over medium-high heat.

Add the beef cubes and cook until browned on all sides. Remove the beef and set aside.

In the same pot, add the chopped onion, sliced carrots, and minced garlic. Cook until the vegetables are softened.

Sprinkle the flour over the vegetables and stir well to combine.

Gradually add the red wine, stirring continuously to avoid lumps.

Add the beef broth, tomato paste, dried thyme, and bay leaves. Stir well.

Return the beef to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
