Ingredients

  • 250 ml beef broth
  • 2 carrots
  • 2 garlic cloves
  • 500 g ground lamb
  • 800 g mashed potatoes
  • 2 tbsp olive oil
  • 1 onion
  • 100 g peas
  • 0.5 tsp pepper
  • 1 tsp salt
  • 1 tsp thyme
  • 2 tbsp tomato paste
  • 1 tbsp worcestershire sauce

Directions

Step 1
Preheat your oven to 200°C (400°F).
Step 2
In a large pan, heat the olive oil over medium heat. Add the chopped onion, carrots, and garlic. Cook until softened, about 5-7 minutes.
Step 3
Add the ground lamb to the pan and cook until browned. Drain any excess fat.
Step 4
Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Let it simmer for about 10 minutes until the mixture thickens.
Step 5
Add the peas to the lamb mixture and stir well.
Step 6
Transfer the lamb mixture to a baking dish and spread it out evenly.
Step 7
Top the lamb mixture with an even layer of mashed potatoes. Use a fork to create some texture on the surface.
Step 8
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
Step 9
Let the shepherd's pie cool for a few minutes before serving.
