Directions
Step 1
Break the matzo into small pieces and place them in a bowl. Cover with warm water and let soak for about 1-2 minutes until softened. Drain and squeeze out excess water.

In a separate bowl, beat the eggs with the milk and salt until well combined.

Add the soaked matzo to the egg mixture and stir until the matzo is well coated.

Heat the butter in a large skillet over medium heat until melted.

Pour the matzo and egg mixture into the skillet. Cook, stirring frequently, until the eggs are set and the matzo is lightly browned, about 5-7 minutes.
Step 6
Serve hot, optionally with a side of applesauce or sour cream.
