Rinse and sort the black-eyed peas, then soak them in water overnight or for at least 8 hours. Drain and rinse before using.

In a large pot, cook the chopped bacon over medium heat until it is crispy. Remove the bacon and set it aside, leaving the bacon grease in the pot.

Add the chopped onion, green bell pepper, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
