Ingredients

  • 100 g bacon
  • 1 bay leaf
  • 0.5 tsp black pepper
  • 450 g black-eyed peas
  • 0.5 tsp cayenne pepper
  • 2 stalks celery
  • 750 ml chicken broth
  • 3 cloves garlic
  • 1 green bell pepper
  • 1 onion
  • 200 g rice
  • 1 tsp salt
  • 2 scallions
  • 1 tsp thyme
  • 1000 ml water

Directions

Step 1
Rinse and sort the black-eyed peas, then soak them in water overnight or for at least 8 hours. Drain and rinse before using.
Step 2
In a large pot, cook the chopped bacon over medium heat until it is crispy. Remove the bacon and set it aside, leaving the bacon grease in the pot.
Step 3
Add the chopped onion, green bell pepper, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
Step 4
Stir in the minced garlic and cook for another minute until fragrant.
Step 5
Add the soaked black-eyed peas, chicken broth, bay leaf, thyme, and cayenne pepper to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes or until the peas are tender.
Step 6
Add the rice, salt, and black pepper to the pot. Stir well and cover. Cook for an additional 20 minutes, or until the rice is tender and has absorbed most of the liquid.
Step 7
Remove the bay leaf and discard. Stir in the cooked bacon.
Step 8
Serve hot, garnished with sliced scallions.
