Ingredients

  • 1 bay leaf
  • 1 bell pepper
  • 1 tsp black pepper
  • 400 g canned tomatoes
  • 1 carrot
  • 2 celery stalks
  • 500 ml fish stock
  • 2 tbsp fresh parsley
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 500 g white fish fillets

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion, garlic, celery, carrot, and bell pepper. Sauté until the vegetables are softened.
Step 3
Stir in the chopped tomatoes, fish stock, and bay leaf.
Step 4
Season with salt and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
Step 5
Add the fish fillets to the pot, making sure they are submerged in the broth.
Step 6
Continue to simmer for another 10-15 minutes, until the fish is cooked through and flakes easily with a fork.
Step 7
Remove the bay leaf and discard. Stir in the chopped parsley.
Step 8
Serve hot with crusty bread or over rice.
