Ingredients

  • 1 pinch Black pepper
  • 15 grams Cornstarch
  • 250 ml Dry white wine
  • 200 grams Emmental cheese
  • 200 grams Fontina cheese
  • 1 Garlic clove
  • 200 grams Gruyère cheese
  • 30 ml Kirsch
  • 15 ml Lemon juice
  • 1 pinch Nutmeg
  • 1 pinch Salt

Directions

Step 1
Rub the inside of a fondue pot with the halves of the garlic clove, then discard the garlic.
Step 2
Pour the white wine and lemon juice into the pot and heat gently until hot, but not boiling.
Step 3
Gradually add the grated cheeses to the pot, stirring constantly until the cheese is melted and smooth.
Step 4
In a small bowl, blend the cornstarch with the Kirsch, then stir into the cheese mixture.
Step 5
Continue to cook gently, stirring constantly, until the mixture is thick and smooth.
Step 6
Season with salt, pepper, and nutmeg to taste.
Step 7
Serve immediately with bread cubes, vegetables, or other dipping items.
