Ingredients

  • 1 tsp black pepper
  • 1 cup brown rice
  • 1 carrot
  • 2 stalks celery
  • 2 cloves garlic
  • 1 cup mushrooms
  • 2 tbsp olive oil
  • 1 onion
  • 2 tbsp parsley
  • 1 tsp salt
  • 4 cups water
  • 1 cup wild rice

Directions

Step 1
Rinse the wild rice and brown rice under cold water.
Step 2
In a large pot, bring 4 cups of water to a boil.
Step 3
Add the wild rice, brown rice, and salt to the boiling water.
Step 4
Reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender.
Step 5
In a large skillet, heat the olive oil over medium heat.
Step 6
Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Step 7
Add the diced carrot, celery, and sliced mushrooms to the skillet.
Step 8
Cook, stirring occasionally, until the vegetables are tender.
Step 9
Season with black pepper.
Step 10
Once the rice is cooked, drain any excess water and fluff with a fork.
Step 11
Combine the cooked rice with the sautéed vegetables in the skillet.
Step 12
Gently mix until well combined.
Step 13
Garnish with fresh parsley before serving.
