Carne Adovada is a traditional New Mexican dish made with pork marinated in a rich, flavorful red chile sauce. It is slow-cooked to perfection, resulting in tender, juicy meat that's perfect for tacos, burritos, or simply served with rice and beans.

In a large bowl, combine the red chile powder, minced garlic, oregano, cumin, and salt.

Add water and apple cider vinegar to the bowl and mix well to form a marinade.

Place the pork chunks in the bowl and coat them thoroughly with the marinade.

Cover the bowl and refrigerate for at least 4 hours, or preferably overnight.

Preheat your oven to 160°C (325°F).

Transfer the marinated pork and marinade into a baking dish.

Cover the dish with aluminum foil and bake for 2.5 to 3 hours, or until the pork is tender and fully cooked.
