Ingredients

  • 250 g andouille sausage
  • 1 bell pepper
  • 2 tbsp cajun seasoning
  • 2 stalks celery
  • 500 g chicken breast
  • 500 ml chicken broth
  • 400 g diced tomatoes
  • 4 cloves garlic
  • 3 green onions
  • 2 tbsp olive oil
  • 1 onion
  • 1 tbsp parsley
  • 300 g pasta
  • 250 g shrimp
  • 2 tbsp tomato paste

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add diced chicken breast and cook until browned.
Step 3
Add andouille sausage and cook for another 5 minutes.
Step 4
Stir in chopped onion, bell pepper, and celery. Cook until vegetables are tender.
Step 5
Add minced garlic and tomato paste, cooking for an additional 2 minutes.
Step 6
Pour in diced tomatoes and chicken broth, then stir in cajun seasoning.
Step 7
Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
Step 8
Add pasta to the pot and cook according to package instructions until al dente.
Step 9
In the last 5 minutes of pasta cooking, add shrimp to the pot.
Step 10
Once pasta and shrimp are cooked, stir in chopped green onions and parsley.
