  • 250 g all-purpose flour
  • 1 tsp baking soda
  • 240 ml buttermilk
  • 1 tbsp cocoa powder
  • 225 g cream cheese
  • 2 eggs
  • 400 g powdered sugar
  • 2 tbsp red food coloring
  • 0.5 tsp salt
  • 200 g sugar
  • 115 g unsalted butter
  • 1 tsp vanilla extract
  • 1 tsp vanilla extract
  • 120 ml vegetable oil
  • 1 tsp white vinegar

Directions

Step 1
Preheat your oven to 175°C (350°F) and line a cupcake pan with paper liners.
Step 2
In a medium bowl, sift together the flour, sugar, baking soda, cocoa powder, and salt.

In a large bowl, whisk together the buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and white vinegar.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

To make the frosting, beat the cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar, beating until light and fluffy.

Stir in the vanilla extract.

Once the cupcakes are completely cool, frost with the cream cheese frosting.
