A delicious and easy-to-make dish combining the rich flavors of sardines with fluffy rice, inspired by island cuisine.
Directions
Step 1
Rinse the rice under cold water until the water runs clear.
Step 2
In a pot, bring 4 cups of water to a boil. Add the rice and salt, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is cooked and the water is absorbed.
Step 3
While the rice is cooking, heat oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Step 4
Add the sardines (including the oil from the cans) to the pan and break them up with a spoon. Cook for 3-4 minutes.
Step 5
Stir in the soy sauce, black pepper, and chopped green onions. Cook for another 2-3 minutes.
Step 6
Once the rice is done, fluff it with a fork and serve it with the sardine mixture on top.
