  • 340 g all-purpose flour
  • 10 g baking powder
  • 240 ml buttermilk
  • 4 eggs
  • 400 g granulated sugar
  • 60 ml lemon juice
  • 2 tbsp lemon zest
  • 5 g salt
  • 227 g unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Preheat your oven to 175°C (350°F) and grease and flour a Bundt pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, beat the butter and sugar until light and fluffy.
Step 4
Add the eggs one at a time, beating well after each addition.

Mix in the lemon zest, lemon juice, and vanilla extract.

Gradually add the dry ingredients in three additions, alternating with the buttermilk, beginning and ending with the dry ingredients.

Pour the batter into the prepared Bundt pan and smooth the top.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
